Cold Avocado Soup
1 ½ cups avocado, peeled and diced
3 tablespoons lime juice
½ teaspoon salt
3 cups chicken stock
¼ cup heavy cream, whipped
Place avocado, lime juice, salt, pepper, and nutmeg in a blender. Add ½ cup
Chicken Stock. Blend 30 seconds at high speed. Pour into bowl.
Whisk in remaining broth and chill until icy cold.
Serve garnished with a spoonful of whipped cream and a sprinkle of nutmeg.
