Baked Artichoke-Parsley Cheese Squares

This easy side dish can be made up to 3 days ahead, and can be served hot, at room temperature or cold.

Prep time: 10 minutes Bake/Cook time: 30 minutes

1 12 ounce jar marinated artichoke hearts, drained, liquid reserved
4 green onions, finely chopped
2 cloves garlic, finely chopped
4 whole whole eggs, beaten
2 tablespoons Atkins Bake Mix
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
8 ounces shredded Monterey Jack or pepper jack cheese
2 tablespoons chopped parsley

Heat oven to 325ºF. Chop artichokes and set aside. Heat marinade liquid in a medium skillet; add green onion and garlic. Sauté 5 minutes, until softened.

In a mixing bowl, combine eggs, bake mix, salt, and pepper. Thoroughly mix in cheese, parsley, artichokes and onion mixture.

Transfer to an 8" or 9" square baking dish. Bake 30 minutes, until set. Cool slightly before cutting into squares.
